A Simple Recipe For Caprese Salad

Red tomatoes and white mozzarella cheese drizzled with a sweet and tangy dark brown balsamic glaze

 

 

My husband and I visited Capri, Italy while honeymooning in Italy in September of 2019. Italy must have cast a spell on me because since we’ve been home I’ve been trying to recreate everything from the cappuccino I had to the fresh and tasty Caprese salad I enjoyed while sipping prosecco from a chilled glass at an outdoor cafe overlooking Marina Grande, the entrance to Capri by boat. (The only other way is via helicopter).

 

                                                   



The story about the first Caprese salad dates back to post-World War I Italy. Apparently, a patriotic mason wanted to make a dish that was a true tribute to Italy by creating a dish with the same colors of his beloved flag red, white, and green. Slices of a ripe red tomato, fresh mozzarella cheese, and some fresh green basil were placed on a plate with a drizzle of olive oil and some cracked pepper. Say my name!





Here’s an easy & portable way to enjoy the taste of Caprese salad. They are individual servings on a toothpick which is also great to take to the beach, on a boat, a picnic, or put a couple on an appy tray for happy hour for home or with friends.

Mini-Caprese Party Sticks 

Ingredients

12 Grape Tomatoes

Mozzarella cheese (sliced or mini-balls available in produce or deli section)

6-8 Fresh Basil Leaves

 

12-15 toothpicks

Balsamic glaze (optional)



Preparation

 

Prep the cheese into 12 bite-sized pieces

Slice the tomatoes in half (horizontally)

Tear basil leaves to fit 





Assembly:

 

🍅Place top half of tomato on a toothpick

🌿Next place torn Basil leaf

🧀 Place bite-size piece of mozzarella

🌿Next place another piece of Basil

🍅Finish with a bottom half of tomato

 

Place on plate or appetizer tray, drizzle with Balsamic Glaze and enjoy❣️
