Easy and Tasty Caprese Salad

My husband and I visited Capri, Italy while honeymooning in Italy last year. Italy must have cast a spell on me because since we’ve been home I’ve been trying to recreate everything from the cappuccino I had to the fresh and tasty Caprese salad I enjoyed while sipping prosecco from a chilled glass at an outdoor cafe overlooking Marina Grande, the entrance to Capri by boat. (The only other way is via helicopter).

The story about the first Caprese salad dates back to post-World War I Italy. Apparently, a patriotic mason wanted to make a dish that was a true tribute to Italy by creating a dish with the same colors of his beloved flag red, white, and green. Slices of a ripe red tomato, fresh mozzarella cheese, and some fresh green basil were placed on a plate with a drizzle of olive oil and some cracked pepper. Say my name!

Here’s an easy & portable way to enjoy the taste of Caprese salad. They are individual servings on a toothpick which is also great to take to the beach, on a boat, a picnic, or put a couple on an appy tray for happy hour for home or with friends.

Wherever you decide to enjoy this taste of Italy, be sure to add the FashionSHEsta touch to by putting them on a pretty plate and/or finishing it with a drizzle of balsamic glaze.
